GREEN CITRUS
Each year, as the air in the Northeast turns crisp and the leaves turn, we turn our attention to California for a truly unique class of citrus – Green Citrus. Picked before maturity, Green Meyer Lemons, Owari Satsumas, Washington Navels, and Minneola Tangelos are bursting with aroma. This is the point in the season when the oils are at their most plentiful, where the juices are wildly sharp but maintain flavor, and where creativity reigns. Use these citruses to cut through the richness of Delica Pumpkins, or in infusions, dressings, desserts, and drinks.
DELICA PUMPKIN
The crown jewel of our winter squash lineup has arrived: Delica Pumpkins. Fudgy and intensely buttery, these are incredibly versatile: at high temperatures, the skins turn crackly and crisp, while any exposed flesh caramelizes. The dense flesh also lends itself well to pasta and pastry fillings thanks to its low water content, and when pureed, the sugars concentrate.
