NICK BOLDT'S STONE FRUIT
For Nick, all that matters to him is whether the variety of stone fruit he is growing tastes exceptional. This means embracing imperfections, like russeting and spots that come with some varieties, as he knows the fruit below the skin has outstanding flavor. Nick starts with varietal selection; for him, this means that every 10 days, he’s onto a new variety, rotating through 100 over the season. He thins his trees by up to 90% of the bloom, to ensure the remaining fruit sizes up and showcases concentrated flavor. Plus, he picks it riper than anyone else – a risky endeavor which requires extreme care when packing.

SUN SWEET MELONS
Our Sun Sweet Melons are cultivated by Oscar in Sermide – a grower we’ve been working with since 2015 and whose name is synonymous with quality. Slow growth, combined with considered cultivation methods, makes for some of the most exceptional produce we source. They can be distinguished from his Honey Moon variety by a beautiful web-like scarring on the skin. Inside, they have a slightly softer consistency and are saturated with sweet juice, while Honey Moon is a little firmer, but equally sweet.
