In the run up to MAD Symposium, we gathered at the iconic Atelier September in Copenhagen for an unforgettable evening exploring what it means to reclaim flavour in a world that so often values speed over ceremony.

Our founder, Franco, was joined by celebrated chef Frederik Bille Brahe in a conversation moderated by creative duo, Per-Anders and Lotta Jörgensen, of Fool Magazine. Together, they discussed the urgency of reconnecting with the origins of our food in a world that often feels rushed, disconnected and commodified.

The room buzzed with thoughtful questions and a shared sense of purpose. We all left reminded that a reverence to flavour not only links us to soil and seasons, but also allows us to slow down and appreciate the craft and ceremony that goes into sharing a meal.
