Bay Leaves – Fresh, vivid and highly aromatic, from mature trees growing on the sea-facing hills of western Greece.

Oregano – Wild-harvested from high-altitude forests, where chestnut and walnut trees shade the hillsides.

Fennel Seeds – Intensely sweet and smooth, grown on the island of Evia by a second-generation farmer.

Each one is chosen for its depth of flavour and sense of place.
