A perfect finishing oil, we first tasted Daniele and Claudia's extra virgin olive oil in 2012 around a dinner table in Sicily. We have been bringing it to London chefs ever since.

The taste evolves over time. In November, when the young, freshly pressed oil is first bottled, it stands out for its complex profile: bright and peppery with notes of tomato vine and cut grass. As time goes on, this unique flavour profile will mellow into a softer oil, retaining its depth but with less initial spiciness on the tongue.

PROTECTED OLIVES

Daniele and Claudia grow 100% Tonda Iblea Olives — a variety so exceptional and unique to the Chiaramonte Gulfi in Sicily's olive region, that it is geographically protected.

Not only is this variety lower yielding than the commercial norm, but Daniele chooses to harvest the olives when they are still green – unlocking vibrant flavours in the oil but further reducing his potential harvest.

PERFECTED PROCESSES

Daniele starts the vendemmia (harvest) in the last week of September, when the olives are still young and green. This takes up to thirty days of non-stop, intense work, each olive being picked and graded by hand. Within 12 hours of being picked, the olives become oil, through the natural process of cold pressing.

Every parcel of land produces fruits with subtle variations in flavour. Daniele keeps each pressing separate so that he can consider their distinct profiles independently. Then, leaning on years of experience growing, tasting and understanding olive oil, he blends the oils to taste.
