Meaty, smooth and intense Cantabrian Anchovies from Matteo in the Basque Country, Spain.

For over 100 years and through three generations, the Orlando family has produced canned and salted fish to the same traditional methods using fish caught sustainably in local waters.

Anchovies are wild-caught by local fishermen in northern Spain. Cured for up to 12 months, they are then dried, filleted, cleaned and packed, all by hand.
