The Okada family have passed their traditional soy sauce making methods from generation to generation since 1753. From using freshly-harvested wheat and soybeans which they traditionally ferment, to mixing their moromi in cedar barrels then slow-pressing it over 10 days, each step has been rigorously tested and perfected.
