Green Means Potent

Green Citrus is a whole new category of seasonality. Back in 2009 we brought the first green Bergamot to London, recognising the culinary potential of their volatile essential oils. Previously only used in the perfume industry, these bergamots were a revelation in the kitchen: ideal for marinades, infusions and baking, their floral aroma brought an innovative spark to the industry.
Fast forward a few years, and Franco and our sourcing team had an epiphany when visiting the Amalfi Coast in the late summer of 2013. Noticing unripe, green-skinned citrus in a grove, it suddenly became obvious that the potential of this early phase of growth went beyond bergamots; it was applicable to citrus much more broadly. We then set about to find growers who would harvest their citrus green for us: from Mandarins to Cara Caras, we started to embrace many varieties weeks ahead of their usual, fully-ripe harvest.
The rest is history. Now, every year, we eagerly await citrus in their green state before watching their essential oils mellow out over the winter, as their colour shifts to orange.
A LEAP OF FAITH TO FIND FLAVOUR
In order to pioneer this new category of seasonality, we needed a grower prepared to trust our instincts and pick their citrus long before its usual harvest.
This is where Carmelo comes in — a grower whose critical attention to his groves raises his citrus fruits above anything else we’ve tried. In 2014, Carmelo started picking some of his most promising fruits up to eight weeks ahead of their fully ripe harvest for us. Although initially doubtful, he worked with us to make our vision a reality, applying his own knowledge to shape this revolutionary new category of seasonality with us.
Today, Green Citrus makes the menus of the most flavour-driven chefs from London and Paris to Copenhagen and New York.
